Ingredients

  • 3 hearts Romaine lettuce chopped
  • 1 Red bell pepper diced
  • 1 Red onion Sliced
  • 1/2 cup Cherry tomatoes
  • 1/2 cup Cucumbers Sliced
  • 1-2 cups Pita chips
Dressing
  • 1/4 cup Olive oil
  • 1 Lemon juiced
  • 1 tbsp Honey
  • 1 tbps Sumac
  • 1/2-1 tsp Dried mint

Method

  1. Make the dressing: In a bowl, whisk together the olive oil, lemon juice, honey, sumac, and dried mint until everything is combined and the oil and honey form a slightly creamy consistency.
  2. Assemble the salad: Add the chopped lettuce to a large serving bowl and toss with the dressing.
  3. Add the tomatoes, cucumber, red onion, red bell pepper on top of the lettuce and sprinkle a little more sumac and dried mint.
  4. Right before serving, top with pita chips.

Notes

Mona's Tip: Tossing the dressing with the lettuce first helps the flavor really coat each leaf. Just be sure not to do this too far in advance, or the lettuce will lose its crunch. Keeping the other vegetables separate until right before serving prevents them from getting soggy and keeps the salad looking fresh and vibrant. Once everything is combined and served, the flavors come together perfectly without sacrificing texture.
