What is Fattoush Salad?

Fattoush is a traditional Middle Eastern salad made with fresh, crisp vegetables, herbs, and pieces of toasted or fried pita bread. It’s known for its bright, refreshing flavor and signature crunch, thanks to the combination of juicy tomatoes, crunchy cucumbers, and crispy pita.

What really sets fattoush apart is the dressing. It’s typically made with lemon juice, olive oil, and sumac—a tangy, slightly citrusy spice that gives the salad its distinctive flavor.

At Mona’s, fattoush is one of those dishes that feels effortlessly fresh and always belongs on the table. It’s simple, vibrant, and the perfect balance to richer meals.

  • Cucumber-Cool, crisp, and refreshing thats perfect for balancing the bold dressing
  • Cherry tomatoes-Juicy and slightly sweet, they add freshness to every bite
  • Pita chips-The signature crunch of fattoush. They soak up the dressing slightly while still staying crisp
  • Lemon juice-Fresh (please use fresh lemons!) and zesty, this is what gives the salad its bright, tangy flavor
  • Olive oil-Smooth and rich, it brings the dressing together and coats everything perfectly
  • Honey-Adds a touch of sweetness to balance the acidity from the lemon and compliments the other dressing ingredients.

Fattoush Salad FAQ

Can I make fattoush salad ahead of time? It’s best to prepare the vegetables and dressing ahead, but add pita chips right before serving so they stay crunchy.

How long does fattoush salad last in the refrigerator?
Fattoush is best eaten fresh-just like any salad. If stored, keep dressing and pita chips separate and eat within 1 day.

Can I add protein to make it a full meal?
Yes! Grilled chicken, shrimp, steak, or chickpeas are great additions if you want a heartier salad.

What can I use instead of sumac in fattoush? Sumac has a unique tangy, citrusy flavor, but if you don’t have it, you can add extra lemon juice or a small splash of vinegar. For the most authentic fattoush flavor, sumac is highly recommended.

How do you keep pita chips from getting soggy in fattoush?
Add the pita chips right before serving and toss lightly with the dressing. This keeps them crisp while still allowing them to absorb just enough flavor.

What to serve with Fattoush Salad

Anything, really. Fattoush salad pairs well with so many dishes thanks to its fresh, tangy flavor and vibrant mix of vegetables. The combination of juicy tomatoes, crisp cucumbers, sweet bell peppers, and sharp red onion brings brightness and balance to richer meals. It’s the kind of side that makes the whole table feel fresher and more complete. Try serving it with:

  • Rice dishes. The tangy dressing pairs perfectly with rice. Each bite soaks up that bright, lemony flavor, making it even more delicious and adding an extra layer of flavor to the meal.
  • Egg rolls-A fun and unexpected pairing, but it works. The crisp, savory bite of egg rolls balances perfectly with the freshness of the salad. (This is my favorite Ramadan pairing)
  • Grilled chicken, beef or seafood-Simple grilled proteins are the perfect match for fattoush. The freshness of the juicy tomatoes, crisp cucumbers, sweet peppers, and sharp red onion really cuts through the richness of the meat, creating a balanced, light yet satisfying meal. Perfect for low carb eating!
  • Hearty soups-Fattoush works beautifully alongside warm, comforting soups. The contrast of hot and cold, rich and fresh, makes the meal feel complete without being heavy, while the vegetables add brightness and crunch to every spoonful.
  • Juicy burger -Fresh tomatoes, cucumbers, and red onions in the salad pair perfectly with a juicy burger. The vegetables add acidity, freshness, and a lightness that balances out the richness of the meat.

Ingredients

  • 3 hearts Romaine lettuce chopped
  • 1 Red bell pepper diced
  • 1 Red onion Sliced
  • 1/2 cup Cherry tomatoes
  • 1/2 cup Cucumbers Sliced
  • 1-2 cups Pita chips
Dressing
  • 1/4 cup Olive oil
  • 1 Lemon juiced
  • 1 tbsp Honey
  • 1 tbps Sumac
  • 1/2-1 tsp Dried mint

Method

  1. Make the dressing: In a bowl, whisk together the olive oil, lemon juice, honey, sumac, and dried mint until everything is combined and the oil and honey form a slightly creamy consistency.
  2. Assemble the salad: Add the chopped lettuce to a large serving bowl and toss with the dressing.
  3. Add the tomatoes, cucumber, red onion, red bell pepper on top of the lettuce and sprinkle a little more sumac and dried mint.
  4. Right before serving, top with pita chips.

Notes

Mona’s Tip: Tossing the dressing with the lettuce first helps the flavor really coat each leaf. Just be sure not to do this too far in advance, or the lettuce will lose its crunch. Keeping the other vegetables separate until right before serving prevents them from getting soggy and keeps the salad looking fresh and vibrant. Once everything is combined and served, the flavors come together perfectly without sacrificing texture.
