Instant Pot BBQ Pulled Chicken Sandwiches

Flavors of summer without standing over a hot grill! Tender, flavorful Instant Pot BBQ Chicken Sandwiches made with sweet and tangy BBQ sauce. An easy meal for potlucks, family dinners, and summer gatherings.

Ingredients
  

  • 3 Boneless skinless chicken breasts
  • 1 ½ cup Sweet Baby Rays BBQ sauce
  • 1/4 cup Open Pit BBQ sauce
  • 1 tsp Mustard
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • Brioche or Hawaiian Bread
  • Cole Slaw
  • Pickles

Equipment

  • Instant Pot
  • Carving board
  • 2 Forks

Method
 

  1. Add the BBQ sauces, mustard, onion powder, and garlic powder to the Instant Pot. Stir until combined.
  2. Season chicken breasts with olive oil, salt & pepper and place the chicken breasts into the sauce mixture. Turn them to coat.
  3. Cover and cook using the Slow Cook setting. (3 ½ -4 hours on high or 6 hours on low)
  4. Remove the chicken to a carving board and shred it using two forks.
  5. Return the shredded chicken to the sauce and stir until the chicken is slathered in the delicious sauce.
  6. Switch the Instant Pot to the Keep Warm setting until ready to serve.
  7. Serve on toasted buns topped with coleslaw and pickles.

Notes

Mona's Tip: The chicken will release some liquid as it cooks, which can thin out the sauce a bit. After shredding the chicken, I like to stir in about ½ cup of Sweet Baby Ray's BBQ Sauce to thicken things up and add even more BBQ flavor.
