Crowd-Pleasing Stuffed Mushrooms (So Simple!)
Stuffed mushrooms make an elegant side dish. They’re usually my go-to appetizer order when dining out. I’ve tried so many kinds at different restaurants, and I can honestly say I haven’t met a stuffed mushroom I didn’t like. They are full of flavor yet light, so I don’t feel too heavy after eating.
I deal with some pretty annoying picky eaters over here, so I have been making this very simple and delicious stuffed mushrooms recipe that has been to their liking. If they enjoy them, you will too! The best part is, I usually have these ingredients on hand aside from the mushrooms…those need to be fresh.
You will need:

- Whole mushrooms
- Italian seasoned bread crumbs
- Parmesan cheese
- Onion
- Garlic
- Salt, freshly ground pepper, Seasoned salt
- Extra virgin olive oil
- Butter
Let’s get started!
Preheat oven to 350°F
First, gently wipe away any dirt or imperfections on the mushrooms using a paper towel.
Next, gently pop off the stems from the mushroom caps and set them aside for later, as they will be used in the filling. Using a small spoon, carefully scoop out the inside of each mushroom cap and add this to the pile of stems. Finely chop both the stems and the contents you removed from the mushroom caps.

Chop a small onion into a small dice and mince 2 garlic cloves. In a sauté pan, melt some butter and add the diced onions. Once the onions begin to soften, add the minced garlic and cook for about one minute. Transfer this mixture to a bowl and add breadcrumbs, seasoned salt, grated parmesan cheese, salt, and pepper. It should look something like this. Taste it; it’s delicious!

Now, let’s stuff these mushrooms!
With a teaspoon, pack the mixture into each mushroom cap.

With the back of the spoon, gently press down and around the edges to get as much filling as you can.

Line a baking sheet with foil and drizzle olive oil over it. Place the stuffed mushrooms on top, then drizzle a little more olive oil over the mushrooms.

Bake for 20-25 minutes or until they are browned and the mushrooms are moist and cooked through.
Plate and serve hot from the oven. Enjoy!

Method
- Pre heat your oven to 350° F
- Wipe off any dirt or other imperfections, gently, with a paper towel.
- Pop out the mushroom caps and set aside-this will be part of the filling.
- With a small spoon, gently scrape the insides of the mushroom caps out and add to the bowl of popped out mushroom caps.
- Dice a small onion and mince 2 gloves of garlic.
- In a medium pan, melt the butter over medium heat and add the diced onions, cooking until they are soft. Then, add the minced garlic and cook for about a minute.
- Turn off the heat and transfer the cooked onion and garlic to a mixing bowl. Taste the mixture and adjust the seasoning by adding more salt or pepper if needed. Let cool slightly.
- Using a small spoon, pack the stuffing mixture into the mushroom cap, pressing gently down and shaping the mixture to hold it in place.
- Place the stuffed mushrooms on a lightly greased, foil-lined cookie tray with olive oil. Then drizzle additional olive oil over the stuffed mushrooms.
- Bake for 20-25 minutes or until the mushrooms look slightly browned and more moist.
- Transfer to a platter and serve hot from the oven!
